Vegan Club Sandwich

We have found finding good Vegan lunches a challenge so we were delighted when we came across this simple Vegan Club Sandwich. Not only is it easy to make but we really enjoyed it. In fact we have loved it so much we’ve had it twice this week!

Just to add we made our own homous rather than buying some but either way this recipe tastes great. We’ll add the homous recipe separately later. Its great to have a side with and there are plenty of options, for example crisps or potato salad. We had ours with potato salad and it worked very well.

Vegan Club Sandwich

Serves 1 (easy to double to make 2 servings) | Preparation 10 minutes


  • 3 Slices of Bread
  • 1 large handful of watercress
  • 1 carrot, peeled and coarsely grated
  • small squeeze of lemon juice
  • 1 tbsp Olive Oil (we have managed to reduce this to 1 tsp and find it works well for us)
  • 2 desert spoons of homous
  • 2 Tomatoes, thickly sliced


1.) Toast the bread.

2.) Meanwhile mix the watercress, carrot, lemon juice and olive oil together in a small bowl.

3.) Spread the homous over each slice of toast. Top 1 slice with the watercress and carrot salad, sandwich with another slice of toast and top with the tomato. Lay the final slice of bread, homous side down, then press down and eat as is or cut the sandwich into halves or quarters.
