Bread and Butter Pudding

We have always enjoyed bread and butter pudding but since becoming vegan we never thought we’d get to enjoy it again. Well we found a recipe from a new recipe book we got for Christmas and just had to try it.

It was amazing and tasted just like we remembered (as in the non vegan one), we enjoyed it a lot. In fact it was so good I bet you could dish it up to a non vegan and they wouldn’t even notice. If you want to try it here is the recipe;

Bread and Butter Pudding

Serves 4  Prep 15 minutes  Cook 35 minutes

Ingredients

  • 30g Vitalite
  • 6 Slices of White Bread (Warburtons Medium)
  • 55g Caster Sugar
  • 85g Sultanas
  • 1 tbsp/12g Soya Flour
  • 1/2 tsp Baking Powder
  • 4 tbsp Water
  • 570ml/1 pint Alpro Soya Milk Light, unsweetened
  • 1 tsp Vanilla Extract
  • Freshly Grated Nutmeg
  • Fry Light (1 Calorie Spray)

Method

1.) Cut the crusts of the bread and thinly spread vitalite on each slice. Slice them into triangles, we did 4 triangles per slice.

2.) Grease a baking dish (we used fry light, 1 Calorie spray) and do one layer of bread. Sprinkle over half the sugar and saltanas and add the last layer of bread. Sprinkle over the remaining sugar and saltanas.

3.) Mix the soya flour, baking powder and water together in a bowl or cup. Pour the milk into a saucepan and heat, do not let it boil. Then mix the soya mixture into the milk and add 1 tea spoon of vanilla extract.

4.) Pour the milk mixture over the baking dish full of bread and grate some nutmeg over the top. Leave to soak for 20-30 minutes.

5.) Heat the oven to 180°c and cook for 20-30 minutes until golden brown on the top. It’s now ready to serve. We enjoyed it with some Alpro Soya Cream.

Note: As there is only two of us we ate this over two days, we had no problems reheating what was left and it tasted just as good.
